1 lb chicken tenders

1 cup all-purpose flour

1 cup buttermilk

1 cup cornmeal

1 teaspoon lemon zest

2 teaspoons lemon pepper seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

Oil for frying (canola or vegetable oil)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, pour the buttermilk over the chicken tenders. Cover and refrigerate for at least 30 minutes to marinate, or up to 2 hours for more flavor and tenderness.

    Prepare the Coating: In a large mixing bowl, combine the flour, cornmeal, lemon zest, lemon pepper seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well to ensure even distribution of the spices.

      Set Up Your Dredging Station: Place the seasoned flour mixture in a shallow dish. Remove the marinated chicken from the refrigerator. Take each chicken tender out of the buttermilk, letting any excess drip off, and dredge it in the flour mixture, pressing lightly to adhere. Shake off any excess coating.
