Ingredients

1 pound large shrimp, peeled and deveined

1 cup all-purpose flour

2 large eggs, beaten

1 ½ cups panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Cooking oil (for frying)

Dipping Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon lime juice

1 teaspoon sriracha (optional for heat)

Fresh chopped cilantro for garnish

Instructions

Prepare the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. This helps achieve a crispier coating.

Set Up the Breading Station: In three separate shallow bowls, place the flour in the first bowl. In the second, add the beaten eggs. In the third, combine the panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and black pepper.

      Coat the Shrimp:

        - Dredge each shrimp in the flour, shaking off any excess.

          - Dip it into the beaten eggs, ensuring it is fully coated.

            - Finally, press the shrimp into the panko mixture, ensuring an even layer of breadcrumbs. Set aside on a plate and repeat with the remaining shrimp.

Heat the Oil: In a large skillet, pour enough oil to cover the bottom by about ½ inch. Heat over medium-high heat until the oil is shimmering (approximately 350°F or 175°C).

Fry the Shrimp: Working in batches to avoid overcrowding, add the breaded shrimp to the hot oil. Fry for 2-3 minutes on each side or until golden brown and crispy. Use tongs to turn the shrimp for even cooking.

Drain Excess Oil: Once cooked, transfer the shrimp to a plate lined with paper towels to absorb any excess oil. Season lightly with additional salt if desired.

Make the Dipping Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, lime juice, and sriracha (if using). Stir until smooth and well combined. Adjust seasoning to taste.

Serve: Garnish the dipping sauce with fresh cilantro. Serve the crispy panko shrimp hot with the dipping sauce on the side.
