Crispy Parmesan Chicken with Garlic Sauce

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

1/2 cup vegetable oil (for frying)

For the Garlic Sauce:

4 tablespoons unsalted butter

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional for heat)

1 tablespoon fresh lemon juice

Fresh parsley, chopped (for garnish)

Salt and pepper, to taste

Instructions
 

Prepare the Chicken:

    - Start by preheating your oven to 400°F (200°C) to keep the chicken warm after frying.

      - Place the flour in a shallow dish and season it with salt, pepper, and garlic powder.

        - In another bowl, beat the eggs. In a third bowl, mix the breadcrumbs, grated Parmesan, Italian seasoning, salt, and pepper.

          Coat the Chicken:

            - One by one, dip each chicken breast into the flour, ensuring it's fully coated. Shake off any excess flour.

              - Next, dip the chicken into the beaten eggs, allowing the excess to drip off.

                - Finally, coat the chicken in the breadcrumb mixture, pressing gently to adhere.

                  Fry the Chicken:

                    - In a large skillet, heat the vegetable oil over medium heat.

                      - Once hot, carefully add the breaded chicken breasts (you may need to do this in batches to avoid overcrowding the pan).

                        - Fry for about 4-5 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F / 74°C).

                          - Use a slotted spatula to transfer the cooked chicken to a paper towel-lined plate to drain excess oil, then keep warm in the oven.

                            Make the Garlic Sauce:

                              - In the same skillet, reduce the heat to low and add the butter. Once melted, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

                                - Stir in the lemon juice, and season with salt and pepper to taste. Let it simmer for a minute to meld the flavors.

                                  Serve:

                                    - Arrange the crispy Parmesan chicken on a serving platter. Drizzle the garlic sauce over the top and garnish with fresh parsley.
