Crispy Taco Stuffed Bell Peppers

Ingredients
  

4 large bell peppers (any color)

1 pound ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning mix (about 1 oz)

1 cup cooked rice (white, brown, or cauliflower)

1 cup black beans, drained and rinsed

1 cup corn (frozen or canned)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or Mexican blend)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream and avocado for serving (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 375°F (190°C).

      Prepare the Peppers:

        Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of each pepper with a bit of olive oil and place them upright in a baking dish.

          Cook the Filling:

            In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté until soft, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

              Add Meat and Seasoning:

                Add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess grease if needed. Stir in the taco seasoning mix, cooked rice, black beans, corn, and diced tomatoes. Mix thoroughly until everything is combined and heated through. Season with salt and pepper to taste.

                  Stuff the Peppers:

                    Spoon the taco filling into each prepared bell pepper, packing it in slightly. Once filled, top each stuffed pepper with shredded cheese.

                      Bake:

                        Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                          Garnish and Serve:

                            Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with fresh cilantro if desired, and serve with sour cream and sliced avocado on the side.
