1 block (14 oz) firm tofu, pressed and drained

3 tablespoons cornstarch

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 red bell pepper, sliced

1 cup snow peas, trimmed

1 small carrot, julienned

2 green onions, sliced

2 cloves garlic, minced

1-inch piece ginger, grated

1 cup cooked brown rice or quinoa

2 tablespoons sesame seeds (for garnish)

Fresh cilantro or basil leaves (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes. In a mixing bowl, toss the tofu with soy sauce, ensuring each piece is well coated. Allow it to marinate for about 15 minutes.

    Coat the Tofu: After marinating, sprinkle cornstarch over the tofu cubes. Toss gently until all pieces are evenly coated. This will create a crispy texture when frying.

      Heat the Pan: In a large non-stick skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Once hot, carefully add the tofu cubes in a single layer. Fry for about 3-4 minutes per side, or until golden brown and crispy. Remove tofu from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add sesame oil. Add minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant. Next, add bell pepper, snow peas, and carrot. Stir-fry for 3-5 minutes until the vegetables are vibrant and slightly tender but still crunchy.

          Combine Tofu and Veggies: Return the crispy tofu to the skillet with the vegetables. Toss gently to combine, allowing the tofu to soak up some of the flavors. Drizzle a little more soy sauce if desired.

            Assemble the Bowl: Divide the cooked brown rice or quinoa among serving bowls. Top with the tofu and vegetable stir-fry mixture. Garnish with sliced green onions, sesame seeds, and fresh herbs.
