3 tablespoons cornstarch

½ teaspoon salt

½ teaspoon black pepper

3 tablespoons vegetable oil (for frying)

2 tablespoons creamy peanut butter

1 tablespoon soy sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon rice vinegar

1 tablespoon honey or agave syrup

1 teaspoon minced garlic

1 teaspoon sesame oil

1 tablespoon chopped fresh cilantro (for garnish)

1 tablespoon chopped peanuts (for garnish)

Prep the Tofu: Begin by draining the tofu thoroughly. Wrap the block in a clean kitchen towel or paper towels and place a weight on top (like a heavy pan) to press out excess moisture for about 15-20 minutes.

    Cut and Prepare: After pressing, cut the tofu into bite-sized cubes, approximately 1-inch thick.

      Coat the Tofu: In a medium bowl, combine the cornstarch, salt, and black pepper. Toss the tofu cubes in the cornstarch mixture until evenly coated.

        Heat the Oil: In a large non-stick pan, heat the vegetable oil over medium-high heat. Once the oil shimmers, it’s hot enough for frying.

          Fry the Tofu: Carefully add the tofu cubes to the pan in a single layer and fry for about 3-4 minutes on each side or until golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan. Remove cooked tofu and place on a plate lined with paper towels to absorb excess oil.
