Crockpot BBQ Chili Chicken Bites

2 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)

1 cup BBQ sauce (your favorite brand or homemade)

1 medium onion (diced)

3 cloves garlic (minced)

1 can (15 oz) black beans (drained and rinsed)

1 can (15 oz) corn (drained)

1 can (14.5 oz) diced tomatoes (with juice)

1 tablespoon chili powder

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon black pepper

Salt to taste

Fresh cilantro (for garnish, optional)

Chopped green onions (for garnish, optional)

Instructions
 

Prep the Chicken: In a large bowl, season the chicken thighs with salt, black pepper, chili powder, smoked paprika, and cumin. Toss to ensure the chicken is evenly coated with the spices.

    Layer Ingredients in the Crockpot: Place half of the diced onions and minced garlic at the bottom of the crockpot. Add the seasoned chicken thighs on top. Layer the black beans, corn, and diced tomatoes over the chicken.

      Add BBQ Sauce: Pour the BBQ sauce evenly over all the ingredients in the crockpot, making sure the chicken is well coated.

        Add Remaining Aromatics: Top with the remaining diced onions and minced garlic for an extra flavor layer.

          Cook: Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and fully cooked.
