Crockpot Cajun Chicken and Wild Rice

1.5 lbs boneless, skinless chicken thighs

1 cup wild rice, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 medium bell pepper (red or green), diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups chicken broth

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 cup frozen peas (optional, for added color and nutrition)

Chopped green onions (for garnish)

Fresh parsley, chopped (for garnish)

Prepare the Base: In the bottom of your crockpot, layer the rinsed wild rice, diced onion, garlic, bell pepper, and celery.

    Add the Protein: Place the boneless chicken thighs on top of the vegetable base.

      Combine Liquids: In a separate bowl, mix the diced tomatoes (with their juices), chicken broth, Cajun seasoning, smoked paprika, thyme, salt, and black pepper. Stir until well combined.
