3 lbs russet potatoes, peeled and thinly sliced

1 large onion, finely chopped

3 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

2 cups heavy cream

1 cup milk

4 cloves garlic, minced

1 tablespoon salt

1 teaspoon black pepper

1 teaspoon paprika (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep Potatoes: Peel and thinly slice the russet potatoes, aiming for about 1/8-inch thickness for even cooking.

    Layer Ingredients: In the crockpot, layer half of the sliced potatoes, followed by half of the chopped onions. Sprinkle with half of the minced garlic, half of the cheddar cheese, and half of the Parmesan cheese. Repeat the layers with the remaining ingredients in the same order.

      Mix Cream Mixture: In a separate bowl, whisk together the heavy cream, milk, salt, black pepper, and paprika until well combined. Pour this creamy mixture evenly over the layered potatoes and cheeses in the crockpot.

        Cook: Cover the crockpot and cook on low for 6-7 hours, or high for about 3-4 hours, until the potatoes are tender and the cheese is bubbly.

          Serve: Once cooked, stir the mixture lightly to combine the melted cheeses. Garnish with freshly chopped parsley before serving.
