Crockpot Chicken & Dumplings

1.5 lbs chicken breasts (boneless, skinless)

4 cups low-sodium chicken broth

1 medium onion, diced

3 carrots, sliced

3 celery stalks, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon black pepper

2 cups frozen peas

1 can (8 oz) refrigerated crescent roll dough

1 tablespoon cornstarch (optional, for thicker broth)

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Place the chicken breasts at the bottom of your crockpot. Season them with salt and pepper, then sprinkle the dried thyme and rosemary over the top.

    Add Vegetables: Add the diced onion, sliced carrots, chopped celery, and minced garlic on top of the chicken.

      Pour in Broth: Carefully pour the chicken broth over all the ingredients in the crockpot. Stir gently to combine.

        Set the Crockpot: Cover and set the crockpot to cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.

          Shred the Chicken: Once the cooking time is complete, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken back into the broth.

            Make Dumplings: Open the can of crescent roll dough and cut the triangles into smaller pieces or strips, roughly the size of your choice (about 1x2 inches works well).

              Add Peas: Stir in frozen peas into the crockpot along with the dumplings. If you prefer a thicker broth, mix cornstarch with 2 tablespoons of water and add that to the mix, stirring gently.

                Cook Dumplings: Cover again and cook on high for an additional 30-40 minutes, until the dumplings are fluffy and cooked through.

                  Serve: Once the dumplings are ready, give everything a gentle stir, taste, and adjust salt if necessary. Ladle the chicken and dumplings into bowls and sprinkle with fresh chopped parsley for garnish.
