3 cups vegetable broth

1 cup heavy cream or non-dairy alternative

1 cup shredded sharp cheddar cheese

1 cup broccoli florets

1 cup diced bell peppers (mixed colors for a vibrant dish)

1 cup frozen peas

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon red pepper flakes (optional for a bit of heat)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prepare the Base: In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and translucent (about 3-4 minutes).

    Combine Ingredients: In the crockpot, add the dry elbow macaroni, sautéed onion and garlic, vegetable broth, and heavy cream. Stir well to combine.

      Add Veggies and Seasoning: Toss in the broccoli florets, diced bell peppers, and frozen peas. Sprinkle in the dried Italian herbs, red pepper flakes (if using), and season with salt and pepper to taste. Mix everything until well distributed.

        Set the Cooking Time: Cover the crockpot with the lid and set it to cook on low for 3-4 hours or high for 1.5-2 hours, stirring occasionally to prevent sticking.

          Cheesy Finish: About 20 minutes before serving, stir in the shredded cheddar cheese, re-cover, and allow it to melt into the macaroni and veggies.
