1 lb ground turkey

2 medium sweet potatoes, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), chopped

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

1 tsp salt

½ tsp black pepper

2 cups vegetable or chicken broth

1 tbsp olive oil

1 cup corn (frozen or canned)

Fresh cilantro, for garnish

Avocado slices, for topping (optional)

Instructions
 

Sauté the Turkey: In a skillet, heat the olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon (about 5-7 minutes). Drain excess fat if necessary.

    Prep the Vegetables: Chop the sweet potatoes, onion, bell pepper, and mince the garlic.

      Add Ingredients to Crockpot: In the crockpot, add the browned turkey, sweet potatoes, black beans, kidney beans, crushed tomatoes, onion, garlic, bell pepper, corn, and spices (chili powder, cumin, smoked paprika, cayenne, salt, and black pepper). Stir to combine.
