Ingredients

2 cups cooked turkey, shredded or diced

1 cup wild rice, rinsed and drained

1 medium onion, diced

3 carrots, sliced

3 celery stalks, sliced

4 cloves garlic, minced

8 cups low-sodium chicken broth

2 cups water

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

1 cup heavy cream (optional for creaminess)

Fresh parsley, chopped (for garnish)

Instructions

Prepare Ingredients: Begin by shredding or dicing the cooked turkey. Rinse the wild rice under cold water, and dice the vegetables (onion, carrots, and celery).

Combine in Crockpot: In a large crockpot, combine the shredded turkey, rinsed wild rice, diced onion, sliced carrots, sliced celery, and minced garlic.

Add Liquids and Seasonings: Pour in the chicken broth and water. Stir in the dried thyme, dried rosemary, and bay leaf. Season with salt and pepper according to your taste.

Cook the Soup: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The wild rice should be tender and the flavors well combined.

Stir in Cream: If you desire a creamier texture, add the heavy cream during the last 30 minutes of cooking, and stir well to combine.

Finish and Serve: Once cooked, remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with freshly chopped parsley on top.

Enjoy: This hearty soup pairs beautifully with crusty bread or a fresh salad!
