When it comes to achieving that perfect crunch in your Crunchy Garlic Green Bean Fries, the role of oil cannot be overstated. Spraying oil on the green beans before baking is essential for several reasons. First, oil helps to create a barrier that encourages browning. When heat is applied, the oil heats up and aids in the Maillard reaction, which is responsible for the delightful golden color and complex flavors associated with crispy foods. In addition, a light coating of oil prevents the green beans from sticking to the baking sheet, allowing for even cooking and easy removal once they are done.

Ingredients

1 lb fresh green beans, trimmed

3/4 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup grated Parmesan cheese

1/4 cup all-purpose flour

2 large eggs

4 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray or cooking oil for frying

Optional: Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Green Beans: Rinse the green beans under cold water and pat them dry with a clean towel. Trim the ends if not already done.

Set Up the Breading Stations: In a shallow bowl, add the flour. In another bowl, beat the eggs and add half of the minced garlic. In a third bowl, combine the breadcrumbs, Parmesan cheese, onion powder, paprika, salt, pepper, and the remaining minced garlic.

Coat the Green Beans: Dip each green bean into the flour, shaking off excess. Then, dredge it in the egg mixture, and finally coat it in the breadcrumb mixture, ensuring it’s fully covered. Place the coated green beans on the prepared baking sheet.

Spray with Oil: Lightly spray the coated green beans with olive oil or your cooking oil of choice to help them crisp up in the oven.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the green bean fries are golden brown and crispy. Give them a gentle toss halfway through baking to ensure even crispness.

Serve: Once cooked, remove from the oven and allow to cool for a minute. Garnish with fresh parsley if desired. Serve hot with your favorite dipping sauce such as garlic aioli or ranch.
