3 cups rolled oats

1 cup nuts (walnuts, almonds, or pecans), roughly chopped

1 cup seeds (pumpkin seeds and sunflower seeds)

1/2 cup unsweetened shredded coconut (optional)

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup dried fruit (cranberries, raisins, or apricots), chopped

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, seeds, shredded coconut, cinnamon, and salt. Stir well to ensure that all the dry ingredients are evenly distributed.

      Prepare Wet Mixture: In a separate bowl, mix together the honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until fully combined.

        Combine: Pour the wet mixture over the dry ingredients. Mix everything together thoroughly until all the dry ingredients are well-coated with the wet mixture.

          Form Clusters: Transfer the granola mixture onto the prepared baking sheet. Press it down firmly to form an even layer about 1/2 inch thick. This helps to create those crunchy clusters once baked.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until golden brown. Make sure to stir the granola halfway through to ensure even browning.

              Cool and Add Dried Fruit: Once the granola is done baking, remove it from the oven and let it cool completely on the baking sheet. As it cools, it will harden and form clusters. Once cooled, break it into clusters and mix in the dried fruit.

                Store: Transfer the crunchy granola clusters to an airtight container. They can be stored at room temperature for up to 2 weeks.
