Crunchy Maple Nut Clusters

Ingredients
  

1 cup mixed nuts (almonds, walnuts, pecans, and hazelnuts)

1 cup rolled oats (gluten-free if desired)

1/2 cup maple syrup

1/4 cup almond butter (or peanut butter)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/2 cup puffed rice or quinoa (optional for extra crunch)

1/4 cup dried cranberries or raisins (optional for sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (180°C). Line a large baking sheet with parchment paper.

    Prepare the Nut Mixture: In a large mixing bowl, combine the mixed nuts, rolled oats, puffed rice or quinoa (if using), ground cinnamon, and sea salt. Toss everything together until well mixed.

      Create the Nut Butter Mixture: In a small saucepan over low heat, combine the maple syrup, almond butter, and vanilla extract. Stir continuously until the mixture is smooth and well blended, about 2-3 minutes. Make sure it doesn’t come to a boil.

        Combine the Mixtures: Pour the hot nut butter mixture over the dry nut mixture. Stir well until all the ingredients are evenly coated with the maple-nut mixture.

          Form Clusters: Using a spoon or your hands, form small clumps (about 1 tablespoon each) of the mixture and place them onto the prepared baking sheet, leaving space between each cluster.

            Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the clusters are golden brown and fragrant. Keep an eye on them to avoid burning, especially towards the end of the baking time.

              Cool and Store: Remove from the oven and let the clusters cool completely on the baking sheet. Once cooled, gently break apart any larger clusters. Store them in an airtight container at room temperature for up to a week.
