1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 packet of ranch seasoning mix (or homemade ranch seasoning)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 ripe avocado, sliced

1 cup diced tomatoes

½ cup shredded cheddar cheese (optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chickpeas: Preheat the oven to 400°F (200°C). In a medium bowl, combine the drained chickpeas, olive oil, ranch seasoning, garlic powder, smoked paprika, salt, and pepper. Toss until the chickpeas are well-coated.

    Roast the Chickpeas: Spread the seasoned chickpeas evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until they are crispy and golden, shaking the pan halfway through cooking time for even roasting.

      Warm the Tortillas: While the chickpeas are roasting, heat a skillet over medium heat. Warm each tortilla for about 30 seconds on each side, until soft and pliable. You can also use a microwave to warm them gently.

        Assemble the Tacos: Once the chickpeas are roasted and crisp, remove them from the oven. To assemble, fill each tortilla with a generous scoop of the crunchy ranch chickpeas. Top with shredded lettuce, avocado slices, diced tomatoes, and cheddar cheese, if using.

          Garnish and Serve: Sprinkle fresh cilantro over the top and serve with lime wedges on the side. Squeeze lime juice over the tacos for an extra burst of flavor.
