Once your Crunchy Veggie Pizza Crackers are out of the oven, it's essential to allow them to cool properly to achieve the perfect texture. Place the crackers on a wire rack to cool completely. This step is crucial as it prevents moisture accumulation, ensuring they remain delightfully crispy. The cooling time typically takes about 10-15 minutes, allowing them to firm up and become even crunchier.

Ingredients

1 cup whole wheat flour

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 cup olive oil

1/4 cup water (add more as needed)

1/2 cup shredded mozzarella cheese

1/2 cup mixed diced vegetables (bell peppers, zucchini, mushrooms, cherry tomatoes)

1 tablespoon Italian seasoning

Optional: Crushed red pepper flakes for heat

Instructions

Prepare the Dough: In a large bowl, combine whole wheat flour, cornmeal, baking powder, garlic powder, onion powder, and salt. Mix well.

Add Wet Ingredients: Create a well in the center of the dry ingredients and add the olive oil and water. Stir until just combined. If the mixture seems too crumbly, gradually add a little more water until a dough forms.

Incorporate Cheese and Veggies: Fold in the shredded mozzarella cheese and the diced vegetables along with Italian seasoning until evenly distributed.

Roll Out the Dough: On a floured surface, roll the dough out to about 1/4 inch thick. Use a pizza cutter or knife to cut into your desired cracker size (square, rectangle, or fun shapes).

Bake the Crackers: Preheat your oven to 375°F (190°C). Arrange the cut crackers on a lined baking sheet, leaving space between them. Bake for 12-15 minutes or until golden brown and crisp.

Cool and Serve: Allow the crackers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve with marinara sauce or your favorite dipping sauce on the side.

Store Leftovers: If you have any leftovers, store them in an airtight container for up to a week.
