Ingredients
  

8 rice paper wrappers

1 cup shredded carrots

1 cup thinly sliced bell peppers (any color)

1 cup cucumber, julienned

1 cup purple cabbage, shredded

1 ripe avocado, sliced

½ cup fresh cilantro leaves

½ cup bean sprouts (optional)

1 tablespoon lime juice

Salt and pepper to taste

Dip of your choice (peanut sauce, sweet chili sauce, or hoisin sauce)

Instructions
 

Prep the Vegetables: In a large mixing bowl, combine shredded carrots, bell peppers, cucumber, purple cabbage, and bean sprouts if using. Drizzle with lime juice, and season with salt and pepper. Toss gently to coat and set aside.

    Soften Rice Paper: Fill a shallow dish with warm water. One at a time, dip each rice paper wrapper in the water for about 10-15 seconds until it is soft but still has some firmness. Carefully lay it flat on a clean, damp surface.

      Assemble the Rolls: Place a small handful of the vegetable mixture in the center of the softened rice paper. Arrange a couple of slices of avocado and a few cilantro leaves on top.

        Wrap It Up: Fold the sides of the rice paper over the filling, then roll from the bottom up tightly yet gently to form a roll. Repeat with the remaining wrappers and filling.
