4 medium carrots, grated

1 cup red cabbage, finely shredded

1/2 cup green bell pepper, thinly sliced

1/2 cup red radishes, thinly sliced

1/4 cup fresh cilantro, chopped

1/4 cup green onions, sliced

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup apple cider vinegar

2 tablespoons olive oil

1 tablespoon honey (or agave for vegan)

Zest of 1 lime (for added zing)

Juice of 1 lime

Instructions
 

Start by preparing all your vegetables: grate the carrots, shred the cabbage, slice the bell pepper and radishes, and chop the cilantro and green onions.

    In a large mixing bowl, combine the grated carrots, shredded cabbage, sliced bell pepper, sliced radishes, chopped cilantro, and sliced green onions.

      In a separate small bowl, whisk together the apple cider vinegar, olive oil, honey, lime zest, and lime juice until well combined.

        Pour the dressing over the vegetable mixture, then sprinkle with sea salt and black pepper.

          Toss everything together until the vegetables are well coated in the dressing and evenly mixed.

            For the best flavor, refrigerate the slaw for at least 30 minutes before serving to allow the flavors to meld.

              Serve chilled as a crunchy side dish or as a topping for tacos, sandwiches, or grilled meats.
