Cucumber Avocado Summer Rolls

This delightful recipe combines hydrating cucumbers, creamy avocados, and vibrant veggies all wrapped in gluten-free rice paper. Perfect for warm days, these rolls not only look beautiful but are also packed with nutrients. Pair them with delicious dipping sauces for a refreshing, healthy snack or light meal. 8 rice paper wrappers

1 medium cucumber, julienned

1 ripe avocado, sliced

1 medium carrot, julienned

1 red bell pepper, thinly sliced

1 cup fresh basil leaves

1 cup fresh mint leaves

1/2 cup vermicelli noodles, cooked (optional)

1/4 cup hoisin sauce (for dipping)

1 tablespoon sriracha (optional, for a spicy kick)

Instructions
 

Prepare the Ingredients: Start by washing and preparing all the vegetables. Julienne the cucumber and carrot, slice the avocado, and thinly slice the red bell pepper. If using vermicelli noodles, cook them according to package instructions, drain, and set aside to cool.

    Wet the Rice Paper: Fill a large shallow bowl or dish with warm water. Take one rice paper wrapper and submerge it in the water for about 10-15 seconds until it's softened but still slightly firm. Remove it from the water and lay it flat on a clean cutting board or plate.

      Assemble the Roll: Begin layering the fillings on the bottom third of the rice paper wrapper. Start with a small handful of vermicelli noodles (if using), followed by a few pieces of cucumber, avocado, carrot, and red bell pepper. Add 2-3 leaves of basil and mint on top.

        Roll it Up: Carefully fold the bottom of the rice paper over the filling, tucking it in tightly. Then fold in the sides and continue rolling until the summer roll is closed. Repeat this process with the remaining wrappers and fillings.

          Serve with Dipping Sauce: Once all rolls are prepared, place them on a serving platter. Serve with a side of hoisin sauce for dipping, and if you like a bit of heat, drizzle with sriracha.
