1 large cucumber

8 oz cream cheese, softened

1/4 cup fresh dill, finely chopped

1 tbsp lemon juice

1 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper

8 slices of whole-grain bread (or your choice of bread)

Optional: lettuce leaves for added crunch

Instructions
 

Prepare the Cucumber: Wash the cucumber thoroughly and slice it into thin rounds, about 1/8 inch thick. If desired, you can also peel it for a smoother texture. Set the slices aside.

    Make the Cream Cheese Mixture: In a medium bowl, combine the softened cream cheese, chopped dill, lemon juice, garlic powder, salt, and pepper. Mix until well combined and smooth.

      Assemble the Sandwiches:

        - Lay out 4 slices of bread on a clean surface.

          - Spread a generous layer of the cream cheese mixture over each slice.

            - If you’re using lettuce, place a leaf on top of the cream cheese (optional).

              - Layer the cucumber slices on top of the cream cheese. Make sure to cover the bread evenly.

                Top and Cut: Place the remaining 4 slices of bread on top to create sandwiches. Press down gently. Using a sharp knife, cut each sandwich into quarters or halves, depending on your preference.

                  Serve: Arrange the sandwiches on a platter and serve immediately, or refrigerate for up to an hour before serving to allow the flavors to meld.
