2 cups cucumber (diced)

1 ½ cups cherry tomatoes (halved)

1 ripe avocado (diced)

¼ red onion (finely chopped)

¼ cup fresh cilantro or parsley (chopped)

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon honey (optional)

Salt and pepper to taste

Prepare the Vegetables: Begin by washing the cucumber and cherry tomatoes. Peel the cucumber if desired, then dice it into bite-sized pieces. Halve the cherry tomatoes and place them in a large mixing bowl.

    Avocado Preparation: Cut the avocado in half, remove the pit, and carefully scoop out the flesh. Dice the avocado and add it to the mixing bowl with the tomatoes and cucumber.

      Add Red Onion and Herbs: Finely chop the red onion and sprinkle it over the salad mix. Add the freshly chopped cilantro or parsley for a burst of flavor.

        Make the Dressing: In a small bowl, combine the olive oil, fresh lime juice, and honey (if using). Whisk together until well blended. Season with a pinch of salt and pepper.
