Ingredients

4 large whole grain tortillas

1 medium cucumber, thinly sliced

1 ripe avocado, mashed

1 cup shredded carrots

1 cup purple cabbage, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons wasabi paste (adjust to taste)

1 tablespoon lime juice

1/4 cup edamame, cooked and shelled

1/4 cup sesame seeds, toasted

Salt and pepper to taste

Optional: soy sauce for dipping

Instructions

Prepare the Wasabi Spread: In a medium bowl, combine the mashed avocado, wasabi paste, lime juice, salt, and pepper. Mix until smooth and creamy. Adjust the wasabi according to your spice preference.

Prepare the Veggies: Thinly slice the cucumber and finely chop the purple cabbage. Place the shredded carrots, chopped cilantro, and cooked edamame in a large mixing bowl.

Assemble the Wraps: Lay a tortilla flat on a clean surface. Spread a generous layer of the wasabi avocado mixture on the tortilla, leaving about an inch from the edges.

Layer the Vegetables: Arrange a few slices of cucumber, a handful of shredded carrots, chopped cabbage, and edamame evenly in the center of the tortilla.

Add Crunch: Sprinkle a tablespoon of toasted sesame seeds over the veggies, adding an extra crunch to each bite.

Wrap It Up: Carefully fold the sides of the tortilla inward, then roll it tightly from the bottom up to enclose the filling. Repeat with the remaining tortillas and filling.

Serve: Cut each wrap diagonally in half for easy eating. Serve with a side of soy sauce for dipping, if desired.
