Ingredients

1 cup Medjool dates, pitted and chopped

1 cup walnuts, chopped (or any nut of your choice)

1/2 cup almond flour

1/2 cup cocoa powder (unsweetened)

1/4 cup maple syrup or agave nectar

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted (or unsalted butter)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional, but recommended for added richness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easier removal.

Prepare the Date Mixture: In a small saucepan, combine the chopped dates with 1/2 cup of water. Cook over low heat for about 5-7 minutes, or until the dates have softened. Allow to cool slightly, then use a fork or a potato masher to mash the dates into a chunky paste.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed dates, almond flour, cocoa powder, maple syrup, applesauce, and melted coconut oil. Whisk together until smooth. If using, mix in the eggs (or flax eggs) and vanilla extract until fully incorporated.

Add Dry Ingredients: Sift in the baking soda, sea salt, and any remaining cocoa powder. Gently fold in the chopped walnuts and dark chocolate chips. Make sure not to overmix; your batter should be thick and rich.

Bake the Brownies: Pour the brownie batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are okay).

Cool and Serve: Once baked, remove the brownies from the oven and let them cool in the pan for about 10 minutes. Lift them out using the parchment paper, transfer to a wire rack, and let cool completely before slicing into squares.

Enjoy: Serve these decadent date brownies as a delightful dessert or a wholesome snack, and enjoy the luscious flavor combined with nutritious ingredients!
