1 cup (170g) high-quality semi-sweet chocolate chips or chopped chocolate

1/2 cup (115g) unsalted butter, cut into pieces

3/4 cup (150g) granulated sugar

3 large eggs, room temperature

1 teaspoon pure vanilla extract

1/4 teaspoon salt

1/2 teaspoon espresso powder (optional, enhances chocolate flavor)

1/2 cup (50g) unsweetened cocoa powder, sifted

Powdered sugar, for dusting (optional)

Fresh raspberries or whipped cream, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease and line an 8-inch round cake pan with parchment paper, leaving a bit of an overhang for easy removal.

    Melt the Chocolate and Butter: In a medium heatproof bowl, combine the semi-sweet chocolate and butter. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water (double boiler method). Stir until melted and smooth. Remove from heat.

      Mix in Sugar and Eggs: In the same bowl, whisk in the granulated sugar until well combined. Let the mixture cool slightly, then add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, salt, and espresso powder (if using).

        Incorporate Cocoa Powder: Gently fold in the sifted cocoa powder using a spatula until fully incorporated, being careful not to overmix.

          Bake the Cake: Pour the batter into the prepared cake pan. Bake in the preheated oven for about 25-30 minutes, or until the edges look set, and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
