Ingredients

1 cup creamy peanut butter (divided)

1/2 cup unsalted butter, melted

1 cup granulated sugar

1 cup light brown sugar, packed

4 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup semi-sweet chocolate chips

1/2 cup chopped peanuts (for topping)

Sea salt (for sprinkling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well with non-stick spray.

Prepare the Brownie Base: In a large mixing bowl, whisk together the melted butter, 1/2 cup of the creamy peanut butter, granulated sugar, and brown sugar until smooth.

Incorporate Eggs: Add the eggs, one at a time, whisking well after each addition. Stir in the vanilla extract.

Dry Ingredients: In a separate bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mix until just combined. Gently fold in the chocolate chips.

Fill the Muffin Tin: Spoon the brownie batter evenly into the prepared muffin cups, filling them about 2/3 full.

Create Peanut Butter Swirl: In a small microwave-safe bowl, warm the remaining 1/2 cup peanut butter in the microwave for about 15-30 seconds until it's pourable. Drizzle a small amount of warmed peanut butter over each brownie cup, using a toothpick to swirl it slightly into the batter for a marbled effect.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs (not wet batter). Be careful not to overbake!

Cool & Top: Remove from the oven and let cool in the tin for about 10 minutes. Carefully remove the brownie cups and transfer them to a wire rack to cool completely. Once cool, sprinkle chopped peanuts and a light sprinkle of sea salt on top for added crunch and flavor.

Serve & Enjoy: Enjoy these decadent peanut butter brownie cups warm or at room temperature, alone or with a scoop of ice cream for an extra indulgent treat!
