1 cup shredded zucchini (about 1 medium zucchini, unpeeled)

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    Prepare the Zucchini: Shred the zucchini using a box grater. Place the shredded zucchini in a clean kitchen towel, twist, and squeeze to remove excess moisture. Set aside.

      Mix the Dry Ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined. Set aside.

        Combine the Wet Ingredients: In a large bowl, mix the granulated sugar, brown sugar, and oil together. Add the eggs and vanilla extract, and beat until the mixture is smooth and well combined.
