1 ½ cups (9 oz) white chocolate chips

2 tablespoons unsalted butter

2 cups heavy whipping cream, divided

¼ cup powdered sugar

1 teaspoon vanilla extract

3 large egg whites

¼ teaspoon cream of tartar

A pinch of salt

Fresh berries and mint leaves for garnish (optional)

Instructions
 

Melt the Chocolate: In a double boiler, or a heatproof bowl set over a pot of simmering water, combine the white chocolate chips and butter. Stir gently until melted and smooth. Remove from heat and let cool to room temperature.

    Whip the Cream: In a large mixing bowl, whip 1 cup of the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Be careful not to overwhip; set aside.

      Beat the Egg Whites: In another clean mixing bowl, beat the egg whites with cream of tartar and a pinch of salt using an electric mixer until soft peaks form.

        Combine Mixtures: Gently fold the cooled white chocolate mixture into the whipped cream until blended. Then, carefully fold in the beaten egg whites. Make sure to incorporate evenly without deflating the mixture.

          Chill the Mousse: Spoon the mousse into individual serving glasses or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

            Serve: Once set, spoon the remaining heavy cream over the top if desired, and garnish with fresh berries and mint leaves for a pop of color.
