1 cup coconut milk (or heavy cream for a non-dairy option)

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

2 tablespoons olive oil

Prepare the Ingredients: Begin by peeling and dicing the butternut squash. Dice the onion and carrots, and mince the garlic.

    Cook the Sausage: In a large pot over medium heat, add the olive oil. Once heated, add the Italian sausage. Cook until browned, breaking it into small pieces with a spoon. This should take about 5-7 minutes. Then, remove the sausage from the pot and set aside.
