Ingredients

2 boneless, skinless chicken breasts

8 oz fettuccine pasta

2 cups broccoli florets

3 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of boiling salted water, add the fettuccine and cook according to package instructions until al dente. During the last 2-3 minutes of cooking, add the broccoli florets. Drain and set aside, reserving 1 cup of the pasta water.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning on both sides. In a large skillet over medium heat, heat the olive oil and add the chicken. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and golden. Remove from the skillet, let it rest for a few minutes, then slice into strips.

Make the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, allowing it to simmer gently. Add the Parmesan cheese and stir continuously until melted and combined. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.

Combine and Serve: Add the drained fettuccine and broccoli to the skillet with the sauce, tossing gently to combine. Then, fold in the sliced chicken. Taste and adjust seasoning with salt and pepper as needed.

Garnish and Enjoy: Serve immediately with a sprinkle of fresh parsley on top for a touch of color and flavor. Enjoy your creamy chicken Alfredo with broccoli!
