Ingredients

2 boneless, skinless chicken breasts

8 oz fettuccine pasta

2 cups fresh spinach

1 cup frozen peas (thawed)

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for a hint of spice)

Instructions

Cook the Pasta: In a large pot, boil water and season with salt. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Prepare the Chicken: While the pasta cooks, season chicken breasts with salt, pepper, and Italian seasoning on both sides.

Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until cooked through and browned. Remove from the skillet, let it rest for a few minutes, then slice into strips.

Sauté Vegetables: In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Then add the spinach and thawed peas, cooking until the spinach wilts (about 2-3 minutes).

Make the Alfredo Sauce: Pour in the heavy cream, slowly bringing it to a gentle simmer. Whisk in the grated Parmesan cheese until melted and the sauce thickens. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Combine Ingredients: Add the cooked fettuccine to the skillet with the Alfredo sauce, tossing to combine. Finally, fold in the sliced chicken.

Serve: Plate the creamy chicken Alfredo, and garnish with chopped parsley and an optional sprinkle of red pepper flakes for a kick. Enjoy your meal!
