Easy Chicken Enchiladas with Green Sauce

1 cup sour cream

1 cup corn tortillas (about 8-10 tortillas)

1 can (4 oz) diced green chiles (optional, for an extra kick)

1 teaspoon ground cumin

1 teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon pepper

Fresh cilantro for garnish (optional)

Sliced jalapeños for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the shredded chicken, ½ cup of green enchilada sauce, sour cream, ground cumin, garlic powder, onion powder, diced green chiles (if using), salt, and pepper. Stir until well combined.

      Warm the Tortillas: To make rolling the tortillas easier, heat them on a skillet or microwave for 15-20 seconds until they are soft and pliable.

        Assemble the Enchiladas: Spoon about ⅓ cup of the chicken mixture into the center of each tortilla. Roll the tortilla tightly around the filling and place seam-side down in a greased 9x13 inch baking dish.

          Top with Sauce and Cheese: Once all the enchiladas are nestled in the baking dish, pour the remaining green enchilada sauce evenly over the top. Sprinkle the shredded cheese generously over the sauce.
