2 cups cooked chicken, shredded (rotisserie works great)

1 can (15 oz) black beans, drained and rinsed

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup red bell pepper, diced

1/2 cup onion, diced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

Sour cream, salsa, and guacamole for serving (optional)

Fresh cilantro for garnish (optional)

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the diced onions and red bell pepper. Sauté for about 3-4 minutes until the vegetables are softened.

    Spice It Up: Stir in the shredded chicken, black beans, garlic powder, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes, allowing the flavors to meld.

      Add the Cheese: Remove the skillet from heat, then mix in the shredded cheese until it’s melted into the filling.

        Assemble the Quesadillas: Lay a tortilla flat in a clean skillet over medium heat. Spread a generous amount of the chicken and black bean filling on one half of the tortilla. Fold the other half over to create a half-moon shape.

          Cook the Quesadilla: Cook the quesadilla for about 3-4 minutes on one side, or until it’s golden brown and crispy. Carefully flip it using a spatula, and cook for an additional 2-3 minutes on the other side until the cheese is fully melted.

            Repeat: Remove the quesadilla from the skillet and keep it warm. Repeat the process for the remaining tortillas and filling.
