1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon ground cinnamon

½ cup granulated sugar

1 large egg

½ cup milk (you can substitute with almond or soy milk)

⅓ cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

⅓ cup brown sugar (for topping)

1 tablespoon additional ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon until well combined.

      Combine Wet Ingredients: In another bowl, beat the granulated sugar and egg until smooth. Then whisk in the milk, vegetable oil, and vanilla extract until fully blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix. The batter may be lumpy, which is perfectly fine!

          Prepare the Topping: In a small bowl, mix the brown sugar with the additional tablespoon of ground cinnamon. Set aside.

            Fill Muffin Tin: Divide the batter evenly among the 12 muffin cups, filling each about ⅔ full.

              Add Topping: Sprinkle the cinnamon sugar mixture generously over the tops of the muffins.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

                  Cool and Serve: Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
