1 (30 oz) bag frozen hashbrowns, thawed

1 (16 oz) container cottage cheese

1 cup sour cream

1 cup cheddar cheese, shredded (plus extra for topping)

1 cup green onions, chopped (reserve some for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt

½ teaspoon paprika (optional for a smoky flavor)

¼ cup butter, melted

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with cooking spray or a little extra melted butter.

    Mix the Cheeses: In a large mixing bowl, combine the thawed hashbrowns, cottage cheese, sour cream, cheddar cheese, and half of the chopped green onions. Mix well until everything is evenly combined.

      Season It: Add in the garlic powder, onion powder, black pepper, salt, and paprika. Stir until the spices are well distributed throughout the mixture.

        Add Butter: Pour the melted butter into the mixture, stirring until it's integrated evenly.

          Transfer to Baking Dish: Carefully pour the hashbrown mixture into the prepared baking dish, spreading it out evenly.

            Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and bubbly.

              Cheesy Top: In the last 10 minutes of baking, sprinkle additional cheddar cheese on top for that gooey, cheesy finish. Continue to bake until the cheese is melted and slightly golden.
