For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons vegetable oil

2 tablespoons soy sauce

1 tablespoon fish sauce

2 tablespoons brown sugar

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon turmeric powder

1/2 teaspoon red pepper flakes (optional, for heat)

1 tablespoon lime juice

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce

2 tablespoons lime juice

2 tablespoons honey or maple syrup

1 teaspoon sesame oil

1-2 teaspoons sriracha (adjust for heat preference)

1/4 cup warm water (to thin the sauce as needed)

Chopped peanuts and fresh cilantro for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, combine vegetable oil, soy sauce, fish sauce, brown sugar, minced garlic, ground coriander, ground cumin, turmeric powder, red pepper flakes, and lime juice. Whisk until well mixed.

      - Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

        Prepare the Peanut Sauce:

          - In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, and sriracha.

            - Gradually add warm water, mixing until you reach your desired sauce consistency (smooth and pourable). Set aside.

              Skewer the Chicken:

                - Preheat your grill or grill pan over medium-high heat. If using metal skewers, they can go directly on the grill; if using wooden skewers, make sure they are soaked.

                  - Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

                    Grill the Skewers:

                      - Place the skewers on the hot grill and cook for about 5-7 minutes on each side, or until the chicken is nicely charred and cooked through (internal temperature should reach 165°F/74°C).

                        Serve:
