1 pound large shrimp, peeled and deveined

2 tablespoons vegetable oil

3 cloves garlic, minced

1/4 cup honey

1/4 cup soy sauce

1 tablespoon fresh ginger, grated

1 bell pepper, sliced (any color)

1 cup snap peas

1/2 cup carrots, julienned

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Cooked rice or quinoa, for serving

Marinate the Shrimp: In a bowl, mix the honey, soy sauce, and grated ginger. Add the shrimp and let marinate for about 15 minutes while you prepare the vegetables.

    Prep the Veggies: Slice the bell pepper, julienne the carrots, and rinse the snap peas. Having everything ready will help you stir-fry quickly.
