Easy Lemon Garlic Shrimp and Broccoli Bowls

2 cups broccoli florets

4 cloves garlic, minced

1 lemon, zested and juiced

2 tablespoons olive oil

1 cup quinoa (or rice)

2 cups vegetable or chicken broth (for cooking quinoa/rice)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Quinoa/Rice: In a medium saucepan, bring 2 cups of vegetable or chicken broth to a boil. Add 1 cup of quinoa (or rice), reduce to a simmer, cover, and cook for about 15 minutes (or according to package instructions for rice) until all the liquid is absorbed and the quinoa/rice is tender. Fluff with a fork and set aside.
