Easy Marry Me Salmon

Ingredients
  

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Zest of 1 lemon

Juice of 1 lemon

1/4 cup heavy cream

1/3 cup sun-dried tomatoes, finely chopped

1/4 cup fresh basil, chopped

1/2 cup grated Parmesan cheese

Instructions
 

Preheat the oven to 400°F (200°C).

    Prepare the baking dish by drizzling 1 tablespoon of olive oil on the bottom of a large baking dish.

      Season the salmon: Pat the salmon fillets dry with paper towels and place them skin-side down in the dish. Drizzle the remaining olive oil over the fillets. Sprinkle with minced garlic, oregano, thyme, salt, and pepper.

        Add the lemon zest and juice: Evenly distribute the lemon zest and squeeze the juice over the salmon fillets.

          Make the creamy sun-dried tomato sauce: In a small saucepan over medium heat, combine the heavy cream, sun-dried tomatoes, and half of the basil. Stir continuously for about 2-3 minutes until heated through. Add in half of the Parmesan and stir until melted and smooth. Remove from heat.

            Pour the sauce over the salmon: Pour the creamy sun-dried tomato mixture evenly over the salmon fillets.

              Top with the remaining cheese and basil: Sprinkle the rest of the Parmesan cheese and the remaining fresh basil over the top.

                Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

                  Serve hot, drizzled with additional lemon juice if desired, alongside your favorite sides, such as steamed vegetables or rice.
