Easy Meatballs and Vegetables Soup

For the Meatballs:

1 pound ground beef (or turkey)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg, lightly beaten

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Soup:

4 cups beef or vegetable broth

1 cup diced tomatoes (canned or fresh)

2 medium carrots, diced

2 celery stalks, diced

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1 bay leaf

1 cup green beans, trimmed and chopped

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Prepare the Meatballs:

    - In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.

      - Shape the mixture into small meatballs, about 1-inch in diameter. You should have roughly 20-24 meatballs.

        Brown the Meatballs:

          - In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat.

            - Add the meatballs in batches, being careful not to overcrowd the pot. Brown the meatballs on all sides (about 5-7 minutes). They do not need to be fully cooked through at this stage. Once browned, remove and set aside.

              Sauté the Vegetables:

                - In the same pot, add a bit more olive oil if needed. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

                  - Stir in the minced garlic and cook for an additional minute until fragrant.

                    Build the Soup:

                      - Pour in the broth and diced tomatoes, then add the oregano, paprika, bay leaf, salt, and pepper. Stir well to combine.

                        - Bring the soup to a gentle boil.

                          Add Meatballs and Green Beans:

                            - Carefully return the browned meatballs to the pot along with the chopped green beans.

                              - Reduce the heat to low and cover the pot. Let the soup simmer for about 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.

                                Taste and Adjust:

                                  - Taste the soup and adjust seasoning if needed. Remove the bay leaf before serving.

                                    Serve:
