Easy Neapolitan Pasta Bake

300g (10.5 oz) penne pasta

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 zucchini, diced

400g (14 oz) can crushed tomatoes

2 teaspoons dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

150g (5.5 oz) mozzarella cheese, shredded

50g (1.75 oz) grated Parmesan cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta until al dente, according to package instructions. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion turns translucent, about 3-4 minutes. Then, add the diced red bell pepper and zucchini, cooking for another 5 minutes until they soften.

        Add the Sauce: Pour in the crushed tomatoes and add the dried oregano, dried basil, salt, and pepper. Stir well to combine and let it simmer for about 5-7 minutes, allowing the flavors to merge.

          Combine Pasta and Sauce: In a large mixing bowl, combine the cooked penne pasta with the sauce and vegetables, mixing thoroughly to ensure the pasta is well coated.

            Layer the Bake: Spread half of the pasta mixture evenly in a greased baking dish. Sprinkle half of the mozzarella cheese over the pasta, then layer the remaining pasta mixture on top. Finish by sprinkling the remaining mozzarella and the grated Parmesan cheese evenly over the entire dish.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
