Ingredients

1 French baguette, sliced into 1/2-inch pieces

4 ripe peaches, sliced thinly

4 ounces prosciutto, torn into pieces

8 ounces ricotta cheese

2 tablespoons honey

1 tablespoon fresh lemon juice

1 tablespoon fresh thyme leaves (plus extra for garnish)

Extra-virgin olive oil (for drizzling)

Salt and pepper to taste

Balsamic glaze (optional, for drizzling)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baguette: Arrange the sliced baguette pieces on a baking sheet. Drizzle lightly with olive oil and sprinkle with a pinch of salt. Bake for about 8-10 minutes, or until golden and crisp.

Prepare the Ricotta Mixture: In a small bowl, combine the ricotta cheese, honey, lemon juice, thyme leaves, and a pinch of salt and pepper. Mix until smooth and well-combined.

Assemble the Crostini: Once the bread is toasted, spread a generous layer of the ricotta mixture on each crostini. Top with a few peach slices and pieces of prosciutto.

Garnish: Drizzle a little more honey over the topped crostini, if desired, and add a few extra thyme leaves for garnish. Optionally, drizzle with balsamic glaze for an extra touch of flavor.

Serve: Arrange on a serving platter and enjoy immediately while the crostini are warm and the flavors are fresh!
