Easy Shrimp Tacos

1 pound medium shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/4 teaspoon paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

1/2 cup diced tomatoes

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

1 avocado, sliced

1/2 cup sour cream or Greek yogurt

Optional: hot sauce for added heat

Marinate the Shrimp: In a medium bowl, combine the shrimp, olive oil, chili powder, cumin, garlic powder, paprika, and salt and pepper. Mix well to coat the shrimp evenly in the marinade. Let it sit for about 15 minutes to absorb the flavors.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp to the hot skillet, cooking for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Be careful not to overcook them.

      Warm the Tortillas: While the shrimp are cooking, warm the tortillas in another skillet over medium heat for about 30 seconds on each side until they are soft and pliable.

        Assemble the Tacos: Take a warm tortilla and layer with shredded cabbage, cooked shrimp, diced tomatoes, and avocado slices. Top with fresh cilantro and a dollop of sour cream or Greek yogurt.

          Serve: Serve the tacos with lime wedges on the side for squeezing over the top and hot sauce if desired for an extra kick.
