Easy Taco Pasta with Ground Turkey

8 oz (about 2 cups) of rotini pasta

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies, undrained

1 packet (1 oz) taco seasoning

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1/2 cup sour cream (optional for serving)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes, or until the vegetables soften. Add the minced garlic and stir for an additional minute until fragrant.

      Brown the Turkey: Increase the heat slightly and add the ground turkey to the skillet. Break it apart with a spatula and cook until it’s browned through, about 5-7 minutes. Season with salt and pepper to taste.

        Combine Ingredients: Once the turkey is cooked, stir in the taco seasoning, black beans, diced tomatoes (with juices), and corn. Mix well and let the mixture simmer for about 5 minutes, allowing the flavors to meld together.

          Mix with Pasta: Reduce the heat to low and add the cooked rotini pasta directly into the skillet. Stir gently to combine, ensuring the pasta is coated evenly with the taco mixture.

            Add Cheese: Sprinkle the shredded cheddar cheese over the pasta. Cover the skillet for a few minutes to let the cheese melt, then stir everything together so the cheese is evenly distributed.
