Ingredients

1 lb boneless, skinless chicken thighs or breasts

1 cup teriyaki sauce (store-bought or homemade)

2 cups broccoli florets

1 cup jasmine or brown rice

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon ginger, freshly grated

1 tablespoon green onions, finely chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions

Cook the Rice: Start by rinsing the jasmine or brown rice under cold water. Cook the rice according to the package instructions, usually 1 part rice to 2 parts water, bringing it to a boil and then reducing to a simmer until tender (approximately 15 minutes for jasmine rice, 40 minutes for brown rice).

Prepare the Chicken: While the rice is cooking, chop the chicken into bite-sized pieces. Season with salt and pepper.

Sauté the Chicken: In a large skillet over medium heat, add the sesame oil. Once hot, add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Stir in the chicken pieces and cook for about 5-7 minutes until they are golden brown and cooked through.

Add Teriyaki Sauce: Pour the teriyaki sauce over the cooked chicken in the skillet. Simmer for an additional 3-4 minutes, allowing the sauce to thicken and coat the chicken evenly.

Steam the Broccoli: In a separate pot or steamer, bring water to a boil. Add the broccoli florets and steam for about 5-6 minutes until tender but still crisp. You can also microwave them with a splash of water in a covered bowl for about 3-4 minutes.

Assemble Your Bowls: Once everything is cooked, start assembling by placing a generous scoop of rice at the bottom of each bowl. Top it with the teriyaki chicken and crown it with the steamed broccoli.

Garnish and Serve: Sprinkle chopped green onions and sesame seeds over the top of each bowl for added flavor and crunch. Serve immediately and enjoy your delicious teriyaki chicken bowls!
