Easy Tuna Pasta Salad

8 oz (225g) rotini or penne pasta

1 can (5 oz) tuna in water, drained

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup frozen peas, thawed

1/4 cup mayonnaise

2 tbsp Greek yogurt

1 tbsp Dijon mustard

1 tbsp lemon juice

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, and red onion. In a large mixing bowl, combine the drained tuna, peas, and the chopped vegetables.

      Make the Dressing: In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth and well combined.

        Combine Salad Ingredients: Add the cooled pasta to the bowl with the tuna and vegetables. Pour the dressing over the top and gently fold all the ingredients together until everything is evenly coated.

          Chill and Serve: Cover the salad with plastic wrap and let it chill in the fridge for at least 30 minutes to allow the flavors to meld. When ready to serve, give it another gentle stir, sprinkle with fresh parsley, and enjoy!
