Easy Vegetable Stir-Fry with Tofu

1 block (14 oz) firm tofu, drained and cubed

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1-inch piece ginger, minced

3 green onions, chopped

2 tablespoons oyster sauce (or vegetarian alternative)

Cooked rice or quinoa (for serving)

Sesame seeds (for garnish, optional)

Instructions
 

Prep the Tofu: Start by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes. Once pressed, cut the tofu into bite-sized cubes.

    Marinate the Tofu: In a medium bowl, toss the cubed tofu with soy sauce and cornstarch until evenly coated. Set aside for about 10 minutes to allow the flavors to meld.

      Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Add the marinated tofu cubes and fry until they're golden and slightly crispy on all sides, about 8-10 minutes. Remove from the skillet and set aside.

        Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the broccoli, bell pepper, carrot, and snap peas. Stir-fry for about 5-7 minutes, or until the vegetables are vibrant and tender-crisp.

          Combine Everything: Return the cooked tofu to the skillet with the vegetables. Pour the oyster sauce over the mixture and toss everything together gently, ensuring all the ingredients are well-coated and heated through, about 2-3 more minutes.

            Finish & Serve: Remove from heat, and stir in the chopped green onions. Serve the stir-fry hot over cooked rice or quinoa. If desired, sprinkle sesame seeds on top for garnish.
