Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/3 cup honey or maple syrup

1/4 cup chia seeds

1/4 cup shredded coconut (unsweetened)

1/2 cup dark chocolate chips (or cacao nibs for a healthier option)

1 tsp vanilla extract

1/2 tsp cinnamon (optional)

A pinch of salt

Instructions

Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, chia seeds, shredded coconut, dark chocolate chips, cinnamon, and a pinch of salt. Stir well until all the dry ingredients are evenly mixed.

Incorporate the Wet Ingredients: In a smaller bowl, mix together the almond butter, honey (or maple syrup), and vanilla extract until you achieve a smooth consistency.

Combine: Pour the wet mixture into the dry ingredient bowl. Using a spatula or your hands, mix everything together until all the dry ingredients are thoroughly coated and the mixture holds together. If it's too crumbly, add a little more nut butter or honey.

Chill the Mixture: Once well combined, cover the bowl with plastic wrap and refrigerate the mixture for about 30 minutes. This helps it firm up and makes rolling easier.

Form the Balls: After chilling, take a tablespoon of the mixture and roll it into a ball between your palms. Repeat the process until all the mixture is shaped into energy balls.

Store: Place the energy balls in an airtight container. They can be stored in the refrigerator for up to a week, or in the freezer for longer freshness.
