2 lbs beef chuck, cut into 1-inch cubes

2 large sweet potatoes, peeled and diced

4 carrots, sliced

1 onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

2 tsp dried thyme

1 tsp dried rosemary

1 tsp paprika

2 bay leaves

Salt and pepper to taste

2 tbsp Worcestershire sauce

1 cup green beans, trimmed and halved

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large skillet, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Sear them in batches until browned on all sides (about 3-4 minutes per batch). This step adds richness to the stew.

    Prepare the Crockpot: Transfer the browned beef to the crockpot. Add the sweet potatoes, carrots, onion, and garlic to the pot.

      Mix the Liquids: In a separate bowl, mix together the beef broth, diced tomatoes, Worcestershire sauce, thyme, rosemary, paprika, and bay leaves. Pour this mixture over the ingredients in the crockpot.

        Season: Stir gently to ensure that the beef and vegetables distribute evenly in the liquid. Taste at this stage and adjust the seasoning with additional salt and pepper, if needed.

          Cook: Cover the crockpot and cook on low for 8 hours or on high for 4 hours. During the last 30 minutes of cooking, add the green beans into the stew and stir gently.

            Final Touch: Once cooking time is up, remove the bay leaves before serving. Taste and adjust seasoning if necessary.
